Combine pumpkin, soy milk and cinnamon in blender or food processor and blend.
Pour mixture into shallow dish.
Brush a large nonstick skillet with 2 teaspoons oil and place over medium heat.
Dip bread in soy milk mixture to coat both sides.
Place coated bread slices on pan approximately 1/8” apart and cook until browned on bottom (about 3 minutes). Turn over and cook until second sides are browned (about 2 minutes).
Transfer to plate and repeat with remaining bread slices, adding more oil to skillet as needed.
