Creamy Tomato Soup with Charred Eggplant

Ingredients

  • 1 cup of Imagine® organic creamy tomato soup
  • 1 small eggplant cut into 1/2 inch slices
  • 1 teaspoon of Spectrum® Moroccan Olive Oil
  • 1 clove of garlic sliced very thin
  • Hain Pure Foods® Sea Salt and coarse black pepper to taste
  • Accompaniment: Terra® Chips

Instructions

  1. In a medium saucepan bring the tomato soup to a light boil and heat through over a medium high heat. Lower heat and keep warm.
  2. Preheat your grill.
  3. Rub the garlic over the eggplant slices, paint with olive oil and season with sea salt and pepper and stack on baking sheet with the remaining garlic.
  4. When your grill is very hot, use tongs to place the sliced eggplant on the grill and grill approximately 2 to 3 minutes on each side or until the eggplant is blackened on both sides and the garlic is golden.
  5. Remove eggplant from grill and cut into cubes. Keep warm.
  6. Ladle the soup into a bowl and spoon in the garlicky eggplant. Serve with your favorite Terra chips
