Creamy Tomato Soup with Charred Eggplant
Ingredients
- 1 cup of Imagine® organic creamy tomato soup
1 small eggplant cut into 1/2 inch slices
1 teaspoon of Spectrum® Moroccan Olive Oil
1 clove of garlic sliced very thin
Hain Pure Foods® Sea Salt and coarse black pepper to taste
Accompaniment: Terra® Chips
Instructions
- In a medium saucepan bring the tomato soup to a light boil and heat through over a medium high heat. Lower heat and keep warm.
- Preheat your grill.
- Rub the garlic over the eggplant slices, paint with olive oil and season with sea salt and pepper and stack on baking sheet with the remaining garlic.
- When your grill is very hot, use tongs to place the sliced eggplant on the grill and grill approximately 2 to 3 minutes on each side or until the eggplant is blackened on both sides and the garlic is golden.
- Remove eggplant from grill and cut into cubes. Keep warm.
- Ladle the soup into a bowl and spoon in the garlicky eggplant. Serve with your favorite Terra chips
